Guest guest Posted March 10, 2002 Report Share Posted March 10, 2002 * Exported from MasterCook * Hearty Seitan Stew Recipe By :Vegetarian Homestyle Cooking, Jeanne Tiberio Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Homestyle Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 cup onion 3 cups water 1 1/2 cups seitan -- diced 1 cup cubed raw potatoes 1 cup sliced carrots 2 tablespoons soy sauce 1 bay leaf 1 teaspoon dried basil -- (or 1 tablespoon fresh) 1 tablespoon parsley 1 teaspoon cornstarch 1/4 cup water Saute onion with oil in a large stew pot for a few minutes. Add remaining ingredients, except cornstarch and 1/4 cup of water. Simmer about 20 minutes, or until potatoes and carrots are almost done. Mix cornstarch with 1/4 cup of water in a measuring cup.
