Crème Brouleé

Amount Measure Ingredient -- Preparation Method

1 10.5 oz lite firm tofu

1/2 cup lemon curd

1 teaspoon vanilla extract

3 teaspoons powdered sugar

10 strawberries -- sliced

raw sugar for garnish

 

Place tofu in food processor; process until smooth. Add lemon curd, vanilla,

and powdered sugar. Process until well-blended and smooth.

 

Pour into mixing bowl, blend in sliced strawberries. Place in four oven-proof

ramekins. Cover top with raw sugar. Place under broiler of oven until sugar

has caramelized. Remove from oven and serve.

 

Nutritional Analysis: 179 calories; 2.5 g fat; 0 mg cholesterol; 28.2 g

carbohydrates; 2.6 g protein
