Guest guest Posted March 8, 2002 Report Share Posted March 8, 2002 * Exported from MasterCook Mac * Provencal Skewered Vegetables with Balsamic Olive Oil Recipe By : Mindy Toomay & Susan Geiskopf-Hadler, p 336 Serving Size : 6 Preparation Time :0:00 Categories : vegetarian patties & skewers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- THE MARINADE: 1/4 cup olive oil 1/2 cup balsamic vinegar 3 cloves garlic -- minced 2 teaspoons paprika 1/2 teaspoon dried oregano 1/8 teaspoon salt several grinds pepper THE SKEWERS: 24 small red potatoes 2 heads garlic 3 medium red bell peppers 6 medium zucchini -- about 7 " long At the height of summer, we tend to do a lot of cooking and eating outdoors. This dish brings the Mediterranean into our backyard. Serves 6. Cover 12 wooden skewers with water and soak for 30 minutes. Prepare the marinade by combining all the ingredients and set aside in a high-walled skillet or dutch oven. Wash the potatoes but leave them whole. (If you can't find the tiny red potatoes, cut larger ones into halves or quarters). Separate the garlic bulbs into individual cloves but do not peel. Add the potatoes and garlic to the marinade and bring to a simmer. Simmer, covered, over medium heat for 5 minutes. Meanwhile, cut the peppers into 1 1/2 inch pieces and slice the zucchini crosswise into 3/4 inch pieces. On each skewer, place 2 potatoes, 3 slices of zucchini, 3 cloves of garlic, and 3 sections of pepper. Alternate the ingredients as you see fit. Grill over medium-high heat for 12 minutes, turning once midway through. Recommended companion dishes: Steamed Basmati Rice (page 50), Mediterranean Salad (page 58), and hot French bread.
