Cream of Potato Soup with Tarragon Mushroom Saute

THE SOUP:

2 tablespoons canola oil

3 ribs celery -- diced

3 green onions -- diced

4 cups water

1 large low-sodium vegetable broth cube

1 teaspoon caraway seeds

1 1/4 pounds red potatoes

1/4 cup sherry

1 teaspoon celery seed

1 teaspoon dried thyme

1 1/2 cups lowfat milk

THE TOPPING:

1 tablespoon olive oil

1 pound mushrooms -- sliced

1 teaspoon dried tarragon

1 tablespoon sherry

 

The sauteed mushrooms make a lovely topping for this creamy soup.

 

Serves 4.

 

Heat the canola oil in a stockpot. Saute the celery and green onions for

about a minute, stirring frequently. Add the water and vegetable broth

cube, and bring to a boil. Toast the caraway seeds (see Page 26). Add

the potatoes to the boiling broth, along with the 1/4 cup sherry, celery

seed, thyme, and caraway seeds. Reduce heat and simmer, covered, until

the potatoes are tender, about 30 minutes. Puree the soup in a blender

or food processor and return it to the stockpot. Gently reheat until it

comes to a simmer, then stir in the milk.

 

In a skillet, heat the olive oil and add the mushrooms, tarragon, and 1

tablespoon sherry. Saute until tender, about 3 minutes. Ladle the soup

into bowls and garnish with the sauteed mushrooms.
