Guest guest Posted March 7, 2002 Report Share Posted March 7, 2002 * Exported from MasterCook * Vegetarian Hero Sandwich Recipe By :Christine Weber Hale Serving Size : 4 Preparation Time :0:30 Categories : March 1997 Quick Light Healthy Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 3-oz each crusty oblong sourdough rolls 6 ounces marinated artichoke hearts -- (halves) drained 1/2 cup lowfat Rondelé or Boursin cheese -- Garlic and Herb 2 cups arugula leaves (2-oz) -- rinsed and crisped (or spinach leaves) 1 cup roasted red bell peppers -- cut into thin strips 1/4 pound thinly sliced smoked gouda cheese Thinly sliced red onion 8 ounces cucumber -- peeled and thinly sliced 1. Halve each sourdough roll horizontally, leaving one long side attached. Scoop out some of the soft bread in the top half of the roll, leaving crust intact. 2. Drain artichokes, reserving 4 tablespoons marinade. Trim off and discard any tough leaves or tips. Cut in half lengthwise and set aside. Brush reserved marinade over scooped-out portion of each roll. 3. Spread the Rondelé equally over the bottom half of each roll. Top the cheese with equal portions of arugula, red pepper strips, artichokes, gouda, onion, and cucumber. Bring the top portion of the roll over the vegetables to close the sandwich. Per sandwich: 455 cal., 36% (162 cal.) from fat; 20 g protein; 18 g fat (8.5 g sat.); 54 g carbo (4.6 g fiber); 1,343 mg sodium; 50 mg chol. VARIATIONS: Substitute chopped niçoise olives for artichokes, or thinly sliced jicama for cucumber. In spring, add blanched pencil-thin asparagus spears. In summer, use vine-ripened sliced red and yellow tomatoes, basil leaves, and fresh mozzarella instead of red peppers, arugula, and gouda.
