Mushrooms with Cardamom from India

 

Recipe By :Troth Wells 2001 Global Vegetarian Cooking

Amount Measure Ingredient -- Preparation Method

1/2 pound mushrooms -- finely chopped

1 garlic clove -- crushed

2 cardamom pods -- seeds, crushed

1 piece fresh ginger (1/2-inch) -- finely chopped

(or 1/2 tsp ground ginger)

1/4 teaspoon turmeric

1/2 lime or lemon -- juiced

oil

salt and black pepper

 

1. Start by mixing together the garlic, cardamom seeds, ginger, turmeric, lime

or lemon juice and seasoning.

 

2. Place the mushrooms in a bowl and pour the mixture over, turning the

mushrooms well to coat them.

 

3. Now heat the oil in a wok or pan and stir fry the mushrooms for 1 to 3

minutes until they are cooked.

NOTES : Cardamoms grow in the eponymous hills of southern India. The pods

the lemon in this light dish, and the turmeric gives it a golden hue.
