Strawberry-Banana Bruschetta

1/2 French baguette -- cut into 3/4-inch slices, lightly

toasted

1 1/2 tablespoons butter -- melted

2 tablespoons granulated sugar

1/2 teaspoon ground cinnamom

1/2 cup diced nectarine

1/4 cup diced strawberries

1 firm-ripe banana -- diced

1 tablespoon lemon juice

1/4 cup sour cream or yogurt

Brown sugar for sprinkling

Mint sprigs -- optional

 

This deluxe version of cinnamon toast tastes both fresh and fruity, and is a

little decadent with the sour cream and bubbling brown sugar on top. Its a nice

quick breakfast you can make in the toaster oven, or serve it with an egg dish

for brunch.

 

Preheat the oven to 375F. Lightly brush toasted bread on one side with butter.

Stir together 1 tablespoon of the granulated sugar with the cinnamon and

sprinkle evenly over the bread slices. Place toast on a large baking sheet and

bake 5 minutes, or until the tops are toasted and crusty.

 

Toss the nectarine, strawberries, and banana with the remaining tablespoon of

sugar and the lemon juice. Spoon the fruit mixture on the toast and top with a

dollop of sour cream. Sprinkle the tops with brown sugar, and place the baking

sheet under a preheated broiler about 1 minute, or until tops are bubbling.

Serve immediately and garnish with mint sprigs, if desired.
