Guest guest Posted March 6, 2002 Report Share Posted March 6, 2002 * Exported from MasterCook * Yogurt w/ Apricots & Pistachios Recipe By :Contributing Editor: Rosemary Wilkinson / pg. 88 Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits/Other Fruits Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound plain yogurt 2/3 cup dried apricots -- chopped 1 tablespoon honey orange rind -- grated 2 tablespoons unsalted pistachios -- chopped ground cinnamon Place the yogurt in a fine sieve and let it drain overnight in the fridge over a bowl. Discard the whey from the yogurt. Place the apricots in a saucepan, barely cover with water and simmer for just 3 minutes, to soften. Drain and cool, then mix with the honey. Mix the yogurt with the apricots orange rind and nuts. Spoon into sundae dishes, sprinkle on a little cinnamon and chill. VARIATION: For a simple dessert, strain the fruit, cover with yogurt and sprinkle with raw sugar and a little mixed spice or cinnamon.
