Yogurt w/ Apricots & Pistachios

Amount Measure Ingredient -- Preparation Method

1 pound plain yogurt

2/3 cup dried apricots -- chopped

1 tablespoon honey

orange rind -- grated

2 tablespoons unsalted pistachios -- chopped

ground cinnamon

 

Place the yogurt in a fine sieve and let it drain overnight in the fridge

over a bowl.

 

Discard the whey from the yogurt. Place the apricots in a saucepan,

barely cover with water and simmer for just 3 minutes, to soften. Drain

and cool, then mix with the honey.

 

Mix the yogurt with the apricots orange rind and nuts. Spoon into

sundae dishes, sprinkle on a little cinnamon and chill.

 

VARIATION: For a simple dessert, strain the fruit, cover with yogurt

and sprinkle with raw sugar and a little mixed spice or cinnamon.
