Guest guest Posted March 5, 2002 Report Share Posted March 5, 2002 * Exported from MasterCook * Green Papaya Salad Recipe By :Anne Sheasby / pg. 65 Serving Size : 4 Preparation Time :0:00 Categories : Fruits/Other Fruits Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium green papaya 4 cloves garlic 1 tablespoon shallots -- chopped 3 red chillies (up to 4) -- seeded & sliced 1/2 teaspoon salt 2 french or runner beans (up to 3) -- cut in 3/4 in. lengths 2 tomatoes -- cut in wedges 3 tablespoons fish sauce 1 tablespoon caster sugar juice of 1 lime 2 tablespoons roasted peanuts -- crushed sliced red chillies -- to garnish Peel the papaya and cut in half lengthways, scrape out the seeds with a spoon and finely shred the flesh. Grind the garlic, shallots, chillies and salt together in a large mortar with a pestle. Add the shredded papaya a little at a time and pound until it becomes slightly limp and soft. Add the sliced beans and tomatoes and lightly crush. Season with fish sauce, sugar and lime juice. Transfer the salad to a serving dish, sprinkle with crushed peanuts and garnish with chillies.
