Guest guest Posted March 6, 2002 Report Share Posted March 6, 2002 with cashews, onions, ginger... * Exported from MasterCook * Sweet Corn and Snow Peas or Mange Tout from Hong Kong Recipe By :Troth Wells 2001 Global Vegetarian Cooking Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup baby corn -- sliced lengthwise 8 ounces snowpeas 1/2 cup cashews 3 scallions -- chopped 1/2 teaspoon finely chopped fresh ginger 1 tablespoon soy sauce oil salt 1. If using canned corn, drain well. If using fresh or frozen, cook in boiling water for a couple of minutes and then drain well. 2. When ready, heat the oil in a wok to medium heat and then fry the cashews until golden. Remove and drain on kitchen paper. 3. Increase heat and then toss in corn and snowpeas together with the ginger and scallions. sprinkle in the soy sauce and stir fry briskly for 2 minutes. 4. Scatter cashews on top and serve. Snack or appetizer or light meal.
