COLCANNON is from the Irish " cal ceann fhionn " or white-headed cabbage. It's a

mashed potato dish flavored with kale or cabbage. Traditionally made with

cabbage, boiling potatoes, leeks, milk, salt and pepper, mace and lots of butter

-- fresh so that it tastes of heather. A ring is hidden in one of the servings

and whoever gets the ring is likely to marry within the year. and is the main

dish for All Hallows' Eve dinner.

 

CHAMP is a mixture of mashed potatoes and scallions or chives, cream not milk

and salt and pepper. Sometimes called " poundies, " they are served in a mound

with a well of melted butter -- similar to colcannon.

 

BOXTY - Potato pancakes (thick or as thin as crepes). The word comes from

" bac-stai " - relating to the traditional cooking of potatoes on the hob (bac)

over an open fire (stai). A hob is a shelf or projection at the back or side of

a fireplace. Grate or mash cooked potatoes, add flour, baking soda, salt and

buttermilk. Add some potato cooking water to thin. Fry in a griddle. Stuff and

roll.

 

FADGE - another potato pancake -- more of a fried biscuit. It is usually served

at breakfast with eggs, bacon, blood sausage, grilled tomatoes and mushrooms.

Mash boiled potatoes with milk and butter. Add flour, salt and pepper. Knead and

turn until it can be shaped into a 1/2-inch thick circle. Cut 3-inch circles.

Fry.

 

DUCHESS potatoes have eggs and cheese. It's a signature dish at Fitzpatrick's

Castle Hotel in Killiney, in Dublin. Piped and baked.
