Guest guest Posted March 5, 2002 Report Share Posted March 5, 2002 * Exported from MasterCook * Bean Soup (harina) from Morocco Recipe By :Troth Wells 2001 Global Vegetarian Cooking Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup canned garbanzo beans -- drained (retain liquid) 1 cup canned haricot (small white beans) -- drained (retain liquid) 2 cups canned tomatoes 1 onion -- chopped 1/2 teaspoon saffron threads -- soaked in a little water 1/2 teaspoon turmeric 1/2 teaspoon cinnamon 1 teaspoon ground coriander 2 tablespoons chopped fresh cilantro -- divided 2 tablespoons chopped fresh parsley -- divided 1/2 lemon 1/4 teaspoon harissa or chili powder -- or double to taste 1 tablespoon flour oil salt and pepper 1. Place both beans, tomatoes and onion in a saucepan, together with saffron and its water, turmeric cinnamon, ground coriander, salt and pepper. Add half the cilantro and parsley. Add lemon juice. 2. Pour in enough water, stock or retained liquid to cover the ingredients in the saucepan. Bring to the boil and then simmer gently for 10 to 15 minutes until the onion is soft. 3. When ready, remove a little of the liquid and mix it with the flour to make a paste, and then stir this into the soup. 4. Continue to cook the soup for a further 5 minutes or longer, stirring to blend the ingredients well. 5. Add the harissa or chili powder just before you serve, mixing well. Serve with the remaining parsley and cilantro scatter on top. * Harissa is a fiery paste made from chillies; you can find it in speciality stores. * [White beans are called Haricot in France, because they're the mature, dried white pod of the French haricot vert, or green bean. This is one of Morocco's most popular dishes, particularly during the Muslim fasting month of Ramadan when it is consumed to break the daily fast. It is usually made of garbanzos / chickpeas, lentils and haricot beans but you can substitute others. Nutr.
