Guest guest Posted March 5, 2002 Report Share Posted March 5, 2002 Lemon flan -- it's traditional and clean and refreshing. * Exported from MasterCook * Lemon Flan | Flan de Limon Recipe By :Gusto (magazine): 2001 Spring Serving Size : 8 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 4-oz each custard cups cooking spray 1 cup sugar 1/4 cup water CUSTARD: 14 Ounces fat-free sweetened condensed milk -- (canned) 1 1/2 cups lowfat 1% milk 4 large eggs 2 teaspoons grated lemon zest 2 teaspoons vanilla extract dash salt GARNISH: 1 lemon 8 mint sprigs 1. Prepare 8 4-ounce custard cups by coating each with cooking spray. Place on a 13x9-inch baking pan with 2-inch or deeper sides. 2. Combine sugar and water in a small, heavy saucepan [tip: use a saucepan that has a spout]. Cover and cook over high heat 2 minutes or until sugar dissolves, stirring frequently. Uncover, reduce heat to medium, and cook for 5 minutes or until golden. stirring constantly. Immediately pour into the prepared custard cups, tipping quickly until caramelized syrup coats bottom of cups.[Tip: Pour and rotate cup at the same time.] 3. Preheat oven to 350F. Heat enough water in a pan or tea kettle to pour easily into the baking pan when needed. 4. Combine condense milk, lowfat milk, eggs, lemon zest, vanilla and salt in a bowl; stir with a whisk. Divide evenly among custard cups. When the water from step 3 is hot, place baking sheet in oven; add water to 1/2-inch depth. BAKE at 350F for 25 MINUTES: a knife inserted in center comes out clean. Remove cups to a rack to cool. Cover and chill at least 3 hours. 5. TO SERVE: Select flat dessert plates. Cut lemon into 1/4-inch or thinner round slices. Rinse and dry mint leaves. Loosen edges of custard using a knife. Place a plate, upside down, on top of each cup; invert onto plates. Drizzle any remaining syrup over custards. Top each with a lemon slice and a mint leaf. [OPTIONAL: Combine 1/4 cup icing sugar and cocoa powder and place in a sieve or sifter.
