Guest guest Posted March 3, 2002 Report Share Posted March 3, 2002 * Exported from MasterCook * Spinach Patties from East Africa Recipe By :Troth Wells 2001 Global Vegetarian Cooking Serving Size : 4 Preparation Time :0:10 Categories : Main Dishes Pastry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound frozen pastry (phyllo) -- thawed 2 pounds fresh spinach -- finely chopped 1 onion -- grated 1/2 pound feta cheese -- crumbled or cottage cheese 1 teaspoon nutmeg 2 eggs -- beaten salt and black pepper 1. Heat oven to 400F. Roll out the pastry to 1/4-inch thickness and cut into circles, using a cookie cutter or saucer for larger patties. 2. Mix the spinach (make sure it is dry) with the other ingredients to make a stiff consistency. 3. Spoon some of the mixture on one half of the pastry circle, fold over the other half and press down the edges with a fork. Pierce the patty with a fork. Repeat until all the mix is used up. 4. Place the patties on a baking sheet in the oven and cook for 10 to 15 minutes until golden brown. Serve with salad. * Frozen or canned spinach may not be suitable as these tend to be very wet; if you use them, drain out most of the moisture after thawing/opening.
