Categories : Desserts

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

8 passion fruit

200 milliliters whipping cream

1 ounce pistachio nuts

BISCUITS:

4 ounces all-purpose flour

1/2 ounce cornstarch

4 ounces lightly salted butter -- diced

2 ounces confectioner's sugar -- plus extra

4 teaspoons rosewater

1. Cut the tops off the passion fruit and spoon out the flesh into a sieve. Pass

through the sieve to remove the seeds. Taste the puree and mix in the sugar as

needed. Whip the cream until stiff and fold the passion fruit puree into it.

Divide among dessert glasses and chill for about 2 hours.

2. For the biscuits: sift the flour and cornstarch into a food processor. Add

the butter, blend until combined. Add the icing sugar and rosewater and briefly

blend. Lightly knead then wrap and chill the dough for 30 minutes.

3. Preheat oven to 400F. Roll out the dough to about 1/8-inch thick and cut out

about 12 rounds. Bake in the oven for 8 minutes until pale golden. Whizz the

nuts in a food processor to roughly chop. Dust the biscuits with icing sugar and

sprinkle the nuts on top of each fruit fool.
