Guest guest Posted March 4, 2002 Report Share Posted March 4, 2002 * Exported from MasterCook * Rocky Road Candy, Spa Style Recipe By :Palms/Oaks Cookbook, California 1998-2002 Serving Size : 34 Preparation Time :0:00 Categories : Candy New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons honey 1 tablespoon peanut butter 2 tablespoons carob powder 1 teaspoon vanilla 4 rice cakes -- unsalted and very crisp Combine all but rice cakes in a pan and cook and stir until melted. TO MICROWAVE: Combine in a 4 cup glass measuring cup or bowl and microwave one minute. Stir until smooth. If mixture is too thick, add a few drops of water. Break rice cakes into approximately one inch pieces in a non-stick large bowl. Use a rubber spatula to scoop the Carob Syrup into the bowl and onto the broken rice cakes. Use the same spatula with a fork to toss the mixture to partially coat the rice cakes. Press the Rocky Road Candy into a nonstick sprayed eight inch pan or plate and cool. Break or cut into one inch pieces and serve. However, you can eat four of them for under 50 calories. If these are left for a few hours or overnight, they will loose their crunch - to restore their crispness heat 1 minute in the microwave.
