Rocky Road Candy, Spa Style

Amount Measure Ingredient -- Preparation Method

2 tablespoons honey

1 tablespoon peanut butter

2 tablespoons carob powder

1 teaspoon vanilla

4 rice cakes -- unsalted and very crisp

 

Combine all but rice cakes in a pan and cook and stir until melted.

 

TO MICROWAVE: Combine in a 4 cup glass measuring cup or bowl and microwave one

minute. Stir until smooth. If mixture is too thick, add a few drops of water.

 

Break rice cakes into approximately one inch pieces in a non-stick large bowl.

 

Use a rubber spatula to scoop the Carob Syrup into the bowl and onto the broken

rice cakes.

 

Use the same spatula with a fork to toss the mixture to partially coat the rice

cakes.

 

Press the Rocky Road Candy into a nonstick sprayed eight inch pan or plate and

cool.

 

Break or cut into one inch pieces and serve.

NOTES : Each piece approx. 1x1-inch. Not too many people will stop at one of

these if they have a chance to get more. However, you can eat four of them for

under 50 calories. If these are left for a few hours or overnight, they will

loose their crunch - to restore their crispness heat 1 minute in the microwave.
