Want a fast vegetable side dish?

 

Grab a bag of fresh baby (or grownup) spinach, some fresh ginger and garlic and

toss this easy, tasty wilted spinach together. Yum! I ate the whole thing

Sesame Spinach with Garlic and Ginger

Amount Measure Ingredient -- Preparation Method

2 teaspoons sesame seeds

1 tablespoon olive oil

2 garlic cloves -- minced

2 teaspoons grated peeled fresh ginger root

6 ounces fresh spinach

(trimmed, washed, and torn up)

 

In a small dry skillet, toast sesame seeds over moderate heat, shaking pan,

until golden. In a heavy saucepan, heat oil until hot and cook garlic and ginger

root, stirring, for 30 seconds, until fragrant. Add spinach by the handful and

cook, stirring, until just wilted. Serve spinach sprinkled with sesame seeds.

Makes 2 or 3 servings.

 

Brenda's kitchen test: Good stuff. I used a 5-ounce bag of baby spinach...and

didn't use all the sesame seeds - but did use some. Rest of recipe I stayed

with as written. I may have over-cooked the spinach a tad, but anyway: I liked

it. I pretty much ate the whole pan of spinach all by myself. (My husband

doesn't like spinach quite as much as I do.) Thanks to Pat Hanneman for
