Guest guest Posted March 2, 2002 Report Share Posted March 2, 2002 * Exported from MasterCook * Irish Mock Beef Stew Recipe By :The Grit Restaurant Cookbook, Jessica Greene & Ted Hafer Serving Size : 10 Preparation Time :0:00 Categories : The Grit Restaurant Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups chunky beef-style TVP 3 1/2 cups water 2 medium boiling or Yukon God potatoes -- peeled & cut into 1 " cubes 1 small yellow onion -- (or 1/2 large) finely chopped 2 cups carrots -- peeled & sliced 3/8 " thick 2 stalks celery -- finely chopped 2 quarts boiling water 1/2 cup butter 1/2 cup all-purpose flour 5 tablespoons nutritional yeast 3/4 cup whole milk 1/4 cup soy sauce 3 tablespoons vegan Worcestershire sauce 3 tablespoons Guinness Stout or other stout beer -- see note* 2 1/2 teaspoons salt 3/4 teaspoon freshly ground black pepper 1/4 teaspoon rubbed sage or pinch of ground sage Combine TVP and 3 1/2 cups water in a saucepan and bring to a boil; remove from heat and set aside. In a large stock pot, vigorously boil potatoes, onion, carrots, and celery in 2 quarts of water just until vegetables are tender, approximately 10 minutes. In a saucepan over low heat, heat butter just until meted. Stir in flour and yeast and whisk vigorously over just enough heat to make mixture bubble. Cook 4 minutes to form a roux. Add milk and soy sauce in 3 to 4 portions, stirring thoroughly after each addition and allowing mixture to thicken between additions (this may require increased heat). When fully combined and thickened, remove from heat. Gently stir roux into vegetable mixture and bring to a gentle boil. Add remaining ingredients. Reduce to a simmer for 5 minutes or until vegetables are extremely tender but retain their body. Serve immediately in warmed bowls. Source: " MC Formatted by Karen C.
