Orange and Cilantro Bean Salad Shaw

Amount Measure Ingredient -- Preparation Method

SALAD:

1 1/2 cups cooked black runner beans

or canned black beans, drained and rinsed

1 orange (navel) -- peeled, sectioned

and cut into bite-size pieces

2 cups cherry tomatoes -- halved or quartered

2 scallion whites -- chopped

1/4 cup minced fresh cilantro

4 oil-cured green olives -- minced

DRESSING:

1 tablespoon extra-virgin olive oil

1 lime -- Juice

1 teaspoon Dijon mustard

 

SALAD: Combine all ingredients in a glass or ceramic bowl. Toss well.

 

DRESSING: Whisk together and pour over the salad. Toss well. Serve at once.

Serves 4.
