Guest guest Posted March 1, 2002 Report Share Posted March 1, 2002 * Exported from MasterCook * Angel Hair Pasta with Asparagus and Cherry Tomatoes Shaw Recipe By :Susan Peery, Editor, Another Bite, 2002-03 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1 garlic clove -- minced 1 shallot -- minced 2 tablespoons minced fresh parsley 2 tablespoons minced fresh mint 2 cups chopped cherry tomatoes 1 1/2 cups asparagus tips -- cut from 1 pound asparagus spears (reserve stems for omelets or soup) 12 ounces dried angel-hair pasta (capellini) 1/4 cup grated Parmesan cheese Salt and freshly ground black pepper -- to taste Heat the oil in a medium skillet and saute the garlic, shallot, parsley, and mint over medium heat, until the shallot has softened. Add the cherry tomatoes and cook, stirring often, until the tomatoes cook down into a pulpy sauce, about 7 minutes. Stir in the asparagus tips, cover, and let them cook until they're bright green and just cooked through, about 3 minutes. Remove from the heat. Meanwhile, cook the pasta according to package directions. Drain in a colander and toss with the sauce. Distribute evenly on serving plate and sprinkle with the cheese. Season with salt and pepper. Makes 2 servings as a main dish, 4 as a side dish.
