Guest guest Posted March 1, 2002 Report Share Posted March 1, 2002 Chickpea Four Tart * Exported from MasterCook * Chickpea Flour Tart (Socca) Nicoise with Roasted Peppers and Goat Cheese Recipe By :Aliza Green Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Chickpea Flour Tart (Socca): 1/2 cup olive oil 2 cups chickpea flour 3 cups water Salt and freshly ground black pepper Roasted Bell Pepper Topping: 1 tablespoon chopped fresh herbs, such as marjoram, thyme, or savory 4 cloves garlic -- peeled 2 teaspoons salt 1/4 cup extra-virgin olive oil 1/2 teaspoon freshly ground black pepper 4 red or orange bell peppers -- cut into quarters and seeded 1/4 pound fresh mild goat cheese -- crumbled, for serving This crispy-thin delicious chickpea flour tart, called " socca " in Provencal dialect, is served hot as a snack is common in Nice, France and on both the French and Italian Rivieras. Chickpea flour is available at most Indian groceries and health food stores. Be sure to keep the flour in the freezer to prevent spoilage. 1. Prepare the Chickpea Flour Tart: Generously brush a 12-inch round pizza pan with 1 tablespoon of the olive oil. Mix chickpea flour, 6 tablespoons oil, water, and salt and peppel taste in a bowl. Stir well to create a batter and let stand at room temperature for 1 hour. 2. Prepare the Roasted Pepper Topping: Preheat the oven 400F. Chop together the herbs, garlic, and salt until mixture is chunky. Mix with the olive oil and black pepper in a large bowl. Add the quartered pepper and toss. Spread the peppers in a single layer on a baking sheet. Roast for 15 to 20 minutes, or until peppers are well-browned at the edges. Cool. 3. Preheat the broiler. Pour a thin layer (about 1/8 inch) of reserved tart batter into the prepared pizza pan. Place the under the broiler, as close to the heat source as possible. Broil 5 minutes. Remove from the oven, and sprinkle with remaining tablespoon olive oil. Broil for 5 to 10 minutes Ionger or until the tart is crispy and golden. Sprinkle with salt and pepper to taste. Slide onto a serving platter and cut into 2-inch squares. Top each square with a few of the roasted peppers and sprinkle with the crumbled goat cheese. Serve immediately.
