Guest guest Posted February 27, 2002 Report Share Posted February 27, 2002 * Exported from MasterCook * Wild Rice Casserole Recipe By :Kim Lila Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 celery stalks -- finely chopped 1 large onion -- finely chopped 1 package mushrooms -- (16-ounce) rinsed and coarsely chopped 1 can tomatoes -- (15-ounce) crushed and drained 1 can tomato sauce -- (8-ounce) 1 teaspoon dill seeds 1/2 teaspoon ground thyme 3 tablespoons soy sauce 1 egg -- beaten 2 cups shredded reduced-fat Cheddar cheese -- divided 1 1/2 cups brown wild rice -- uncooked 1 can dark red kidney beans -- (15 1/2-ounce) well drained Serves 4 to 6. Although this recipe is meatless, it is hearty and full of flavor. This dish should be accompanied with a salad when serving more than 4 people to make more complete meal. Preheat oven to 350 degrees. In a large bowl, combine celery, onion, mushrooms, tomatoes, tomato sauce, dill, thyme, soy sauce, egg, and half of the cheese. Mix well. Stir in the uncooked rice and beans. Place mixture in a lightly greased round, or oval, casserole (2-21/2-quart). Cover and bake for 55 minutes. Uncover and sprinkle with remaining cheese; bake for 5 minutes or until cheese is melted. Serve at once.
