Guest guest Posted February 27, 2002 Report Share Posted February 27, 2002 * Exported from MasterCook * Bart's and Dar's Nondairy Maple Cookies Recipe By :Ken Haedrich Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups whole wheat flour 1 1/4 cups shredded unsweetened coconut 1 tablespoon baking powder 3/4 cup maple syrup 1/4 cup water 1/4 cup vegetable oil Preparation time: 10 minutes Baking time: 12 to 15 minutes per batch Yield: About 2 dozen This recipe, invented by my friends Bart and Dar, is solid evidence that people with dietary restrictions don't have to roll over and play dead. For me - whose baking generally rings like an ad from the National Dairy Council - it was a real shocker to learn that a cookie without butter, eggs, milk products, or salt could taste so full and rich. Being pared down to the basics, this cookie has the advantage of a clean maple flavor. Preheat the oven to 350F. Combine the whole wheat flour, coconut, and baking powder in a large mixing bowl and toss to mix. In a separate bowl, whisk together the remaining ingredients, then stir them into the dry mixture, just until combined. Spoon rounded tablespoons of dough onto a greased baking sheet, leaving about 2 inches between them. Bake - only one sheet at a time - for 12 to 15 minutes, until slightly resistant to gentle finger pressure. Transfer to a rack and cool.
