Guest guest Posted February 26, 2002 Report Share Posted February 26, 2002 * Exported from MasterCook * Noodles with Peanut Sauce ~V Recipe By :Everyday Chinese Cooking by Leeann and Katie Chin Serving Size : 4 Preparation Time :0:00 Categories : Noodles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ounces fresh or dried egg noodles 1 teaspoon salt 2 teaspoons vegetable oil 2 green onions -- with tops, shredded 1 small carrot 1 medium cucumber 2 ounces snow peas 1 tablespoon dry mustard PEANUT SAUCE: 1/4 cup creamy peanut butter 2 tablespoons sesame oil 3 tablespoons soy sauce 2 1/2 tablespoons vinegar 2 tablespoons sugar 3 tablespoons water 1. In a Dutch oven, bring 8 cups water to a boil. Add the noodles, salt, and vegetable oil. Stir to separate the noodles and return to a boil. Reduce the heat to medium and cook, uncovered, for 2 to 3 minutes, or until the noodles are done. Rinse with cold water, drain, and set aside. 2. Place the green onions in ice water for 10 minutes. Drain well. 3. Peel the carrot and cut into matchstick strips. Peel the cucumber and slice into 2-inch pieces; then cut into matchstick strips. 4. Remove and discard the strings from the pea pods. Place the peas in boiling water and return to a boil. Immediately rinse with cold water and drain thoroughly. Cut into 1/8-inch matchstick strips. 5. To prepare the sauce, in a medium bowl, thoroughly mix the peanut butter, sesame oil, soy sauce, vinegar, sugar, and water. 6. In a separate bowl, mix the dry mustard with 1 tablespoon water, stirring in one direction until smooth. Add this mixture to the peanut sauce and stir until well mixed. 7. Place the noodles on a serving platter. Arrange the carrot, cucumber, and snow pea pods in a spoke on top of the noodles. Place the green onions in the center of the spoke. Before serving, pour the peanut sauce over and toss gently.
