I'm still looking for Sharwood's or any Chinese version of the yellow bean

sauce!!!

Stir Fried Celery in Two Bean Sauce ~V

1 3/4 pounds celery -- (about 1 head)

1 tablespoon peanut oil

1 teaspoon sesame oil

2 tablespoons thinly sliced garlic

3 tablespoons Shaoxing rice wine or dry sherry

2 teaspoons yellow bean sauce

2 teaspoons chili bean sauce

3 tablespoons water

 

1. Separate stalks of the celery and rinse thoroughly under cold running water.

String the tough outer stalks with a paring knife. chop the celery and leaves

across into 1-inch pieces.

 

2. Heat a wok or large frying pan over a high heat until it is hot. Add the

oils, and when they are very hot and slightly smoking, add the garlic and celery

and stir fry for 2 minutes. Then add the rice wine, bean sauces and water and

continue to stir-fry for 5 minutes or until the celery is thoroughly cooked

[(tender crisp]. Transfer to a warm dish and serve at once.

 

 

YELLOW BEAN SAUCE - A thick, spicy, aromatic sauce made of sweet yellow beans

(soy), flour and salt which are fermented together. It is quite salty, but it

adds a distinctive flavor to Chinese (esp. Beijing) sauces. There are two forms:

whole beans in a thick sauce and mashed or pureed beans (sold as crushed yellow

bean sauce). Ken prefers the whole bean variety " because it is slightly less

salty and has a better texture. " Sharwood (brand). Hot Thai version " Bean Sauce

(Tao Jiao) " Substitute a sweet miso. Store the unused portion in refrigerator

or freeze.

NOTES : Celery is a much neglected vegetable in Ken's opinion. It is used in

stocks, chopped and added to salads or simply used as a filler. " I love it's

distinctive taste and flavor and often use it as a main vegetable by itself,

simply stir fried. " It should still be crunchy, which is part of it's

attraction. " This is an easy dish to make and is a wonderful accompaniment to
