Whole Wheat Maple Snickerdoodles

2 2/3 cups sifted whole wheat flour

1 teaspoon cream of tartar

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 cup unsalted butter -- at room temperature

2/3 cup maple syrup -- at room temperature

2 large eggs -- at room temperature

2 tablespoons sugar

 

Preparation time: 15 to 20 minutes, plus 30 minutes chilling time

Baking time: 10 minutes per batch Yield: 3 dozen

Credit for this healthy recipe goes to my wife, Karen, whose greatest mission in

life - I love to tease her -is to bring whole wheat awareness to the world. We

have a running debate over how much whole wheat flour is appropriate for any

given recipe; she always wants more than I do. No complaints here, however, for

this tasty, attractive, and wholesome version of a childhood favorite.

 

Sift the whole wheat flour a second time with the cream of tartar, baking soda,

salt, and cinnamon. Set aside.

 

In a medium-size mixing bowl, cream the butter until fluffy, scraping down the

sides of the bowl. With the mixer still running, add the maple syrup in a thin

stream, followed by the eggs, one at a time. Gradually stir the dry ingredients

into the creamed mixture, stirring just until blended. Cover and refrigerate for

30 minutes.

 

Preheat the oven to 400F. and put the sugar in a small bowl. With lightly

floured hands, roll the dough into balls about 1 1/4 inches in diameter. Roll

the balls in the sugar, then place on an ungreased baking sheet, leaving 2

inches between them. Bake for 10 minutes, just until the tops no longer yield to

light finger pressure. Transfer to a rack and cool. Store in an airtight

container.
