Guest guest Posted February 26, 2002 Report Share Posted February 26, 2002 for the Rutabaga Steaks * Exported from MasterCook * Mango Barbecue Sauce Recipe By :Karen Hubert Allison Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups mango puree 1/4 cup rum 1/4 cup honey 3 tablespoons olive oil 3 tablespoons cider vinegar 2 tablespoons fresh lemon juice 2 cloves garlic -- crushed 1/2 teaspoon dry mustard -- optional 1/4 teaspoon chili powder -- or to taste Here is a great little barbecue sauce that is good on anything, including the rutabaga steak on page 307. It can be refrigerated for up to 2 weeks, and frozen or canned for months longer. It offers a lovely, fruity alternative to tomato-based barbecue sauces, though I have also extended this sauce by adding 1 cup of ketchup and simmering a minute or two longer. Combine all the ingredients in a stainless-steel saucepan and simmer for 3 to 5 minutes, or just long enough to reduce and darken the sauce slightly, and to cook out the alcohol.
