Sweet And Sour Salad

Amount Measure Ingredient -- Preparation Method

1/2 cup sugar

1/2 cup water

1 cup rice vinegar

2 large cucumbers -- sliced thin

2 large carrots -- grated

1 medium cabbage head -- shredded

1 medium green pepper -- diced fine

 

Serving Size: 6

 

Mix sugar, water and vinegar. Pour over cucumbers, carrots, cabbage and

green pepper. Cover and refrigerate one day before serving. I use a

plastic bowl with tight, fitting cover, so that it can be shaken on

occasion to enhance flavors.

 

Nutritional analysis: Calories 97, Fat 0, Cholesterol 0, Carbohydrate 27,

Protein 1, Sodium 19.
