Guest guest Posted February 24, 2002 Report Share Posted February 24, 2002 * Exported from MasterCook * Oriental Mushroom-Bean Sprout Salad Recipe By : The Cooking Cardiologist, by Richard Collins, page 148 Serving Size : 4 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 teaspoons honey 3 teaspoons soy sauce -- low sodium 1/4 teaspoon ground ginger 3 teaspoons rice vinegar 1 teaspoon roasted sesame oil 1/2 pound mushrooms -- sliced 3 sliced green onions -- , including greens 3/4 cup bean sprouts -- drained 2 teaspoons fresh coriander -- minced 1 teaspoon toasted sesame seeds -- (optional) Serving Size: 4 In a large bowl, whisk together the honey, soy sauce, ginger, vinegar and sesame oil. Add the mushrooms, onions and bean sprouts. Toss well. Cover and refrigerate for 2 to 3 hours. Transfer the salad to a serving platter and sprinkle with the coriander and sesame seeds.
