Original recipe came from Rosie Magazine and they used the sauce on Gnocchi. Since I had none and did not feel like making it from scratch, I used the sauce on Farfalle and it was really good. I also omitted the pine nuts as my son is allergic to nuts. My DH wasn't thrilled because he isn't too happy with sun-dried tomatoes. I love them. * Exported from MasterCook * Farfalle with Creamy Sun-Dried Tomato Sauce Recipe By : RisaG Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Sun-Dried Tomato Sauce: 4 oz sun-dried tomatoes -- rehydrated 2 lg cloves garlic -- chopped 1/2 cup Parmigiano Reggiano -- shredded 1 cup light cream 1/2 tsp salt 1/4 tsp black pepper 2 tbsp parsley -- chopped 2 tbsp fresh basil -- chopped Pasta: 1 lb dried farfalle pasta Garnish: sprinkle parmesan cheese For sauce: Place dried tomatoes in a bowl. Cover with boiling water and cover. Let sit for 20 minutes to soften. Drain and reserve a little of the liquid from the tomatoes. Place the hydrated tomatoes along with the other sauce ingredients into a food processor. Puree. If you wish, add a bit of garlic-infused olive oil to make more of an emulsion. Set aside. For pasta: Put a big pot of water up for a boil. When it comes to a boil, add salt and pasta. Cook according to box instructions. Drain well. To assemble: Place cooked farfalle in a large skillet, preheated over medium heat. Add a bit of the cooking water and the sauce. Mix well and cook for 1 minute to re-heat the pasta and sauce and to meld them together. To serve: Place 1/4 of the pasta in each serving bowl. Sprinkle each with some Parmesan.
