Guest guest Posted February 24, 2002 Report Share Posted February 24, 2002 * Exported from MasterCook * Sunday Miracle BBQ Sandwich Recipe By :The Grit Restaurant Cookbook, Jessica Greene & Ted Hafer Serving Size : 6 Preparation Time :0:00 Categories : The Grit Restaurant Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 8 oz packages tempeh vegetable oil or butter 4 tablespoons butter or vegan margarine 1 large yellow onion -- finely chopped 1 tablespoon minced garlic 1 tablespoon dry mustard 2 teaspoons curry powder 1 teaspoon onion powder 1/4 teaspoon freshly ground black pepper generous pinch cayenne pepper 2 cups strong brewed coffee 3 cups ketchup 1 cup apple juice 1/2 cup cider vinegar 1/2 cup soy sauce 4 tablespoons vegan Worcestershire sauce 4 tablespoons pineapple or orange-pineapple juice concentrate (or 1 cup finely chopped fresh or canned crushed pineapple in juice) 1 cup grated carrot 5 medium green onions -- (dark green parts only), minced 6 toasted Old Time Grit Buns Slice tempeh into strips 2 inches long and 1/4 to 1/2 inch thick. In a small amount of vegetable oil or butter in a medium saucepan, saute tempeh, tossing often to cook evenly, until extremely well-browned; set aside. Melt 4 tablespoons of butter or margarine in a large pot and add onion and garlic. Cook over high heat, stirring often, until caramelized. Stir in seasonings and cook briefly, then add all remaining ingredients except tempeh, carrots, and green onions. Bring mixture to a boil and cook, stirring often, until it thickens. Stir in prepared tempeh, carrots, and green onions. Cook over medium-high heat, stirring often, for 4 to 5 minutes. Remove from heat and allow to sit for 10 minutes before serving on a toasted bun.
