Guest guest
Testing, testing. . . . I've been semi-absent for awhile because my old computer had major problems. They can probably be fixed, but I ordered a new computer anyway, which arrived yesterday. I've been busy getting it all set up, programs installed, etc. Of course, MasterCook was a priority! This computer comes with Windows XP, so I'm seeing how MasterCook works with it. So far, so good. Here's another recipe from the new Moosewood cookbook. FYI -- If you have a Super Target near you -- the one near me had a display for the new Moosewood Restaurant New Classics cookbooks with lots of recipe cards! I picked up quite a few. This is from one of them: * Exported from MasterCook * Tofu Sloppy Joes Recipe By :Moosewood Restaurant New Classics, The Moosewood Collective Serving Size : 8 Preparation Time :0:00 Categories : Moosewood New Classics Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup chopped onions 1 clove garlic -- minced or pressed 2 tablespoons vegetable oil 1 cup chopped bell peppers 1 16 oz cake tofu -- crumbled or mashed 1 3/4 cups diced tomatoes -- (fresh or 14 oz can) 2/3 cup tomato paste -- (6 oz can) 1/2 cup water 1 teaspoon ground coriander 1 teaspoon ground cumin 1 teaspoon dried oregano 1 teaspoon brown sugar 1 pinch cayenne 1 teaspoon salt ground black pepper -- to taste 8 kaiser or hamburger rolls In a large nonreactive pan, saute the onions and garlic in the oil on medium heat until soft, about 5 minutes. Add the bell peppers and continue to cook for 5 minutes, stirring occasionally. Stir in the tofu, diced tomatoes, tomato paste, water, coriander, cumin, oregano, brown sugar, cayenne, and salt, and simmer for 10 minutes. Add black pepper to taste. Slice and toast the rolls. Fill each roll with about 1/2 cup of the sloppy joe mix. Serve immediately. Source: " MC Formatted by Karen C.
