(Folks who have tried it write me they really like it.) I posted it around town long ago...but thought it time to do it again for those who missed it. Think healthy, easy, cool salad for all those BBQ's we will soon be having! (And for you in So Calif who are roasting now.) Brenda * Exported from MasterCook * Jerry's Carrot & Cabbage Salad Delish! - Repost Recipe By :Jerry (the Chef) Adams Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cups cabbage -- (green) grated into pieces about 1/2 by 1 inch 2 1/2 cups carrot -- grated 1 1/4 cups dill pickle -- coarse chop* 1/4 cup mayonnaise 1/4 cup plain yogurt salt and pepper to taste * Not real fine, leave in about 1/4 inch chunks. He is such a good cook! This recipe of his has received favorable reviews -- one lovely lady wrote me that this is her favorite recipe now for a cabbage salad. For those who want kids to eat veggies, try this. (Some of us aren't into carrots and cabbage...but together with the pickle and other stuff, this is wonderfully edible. I can't get enough of it -- and I am one of those 'picky eaters' that mom's talk about.) Try this even if you don't think pickle sounds right -- it didn't to me either, but Jerry's mom makes dishes like these (that's where he gets these ideas) and hers are always wonderful!
