Guest guest Posted February 23, 2002 Report Share Posted February 23, 2002 * Exported from MasterCook * Mushrooms Rosemary Recipe By : Vegetarian Celebrations by Nava Atlas, page 237 Serving Size : 8 Preparation Time :0:00 Categories : Appetizers And Snacks Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds large fresh mushrooms 2 1/2 tablespoons reduced-fat margarine -- cut into thin slices 1 small onion -- finely chopped 1 clove garlic -- minced, up to 2 1 teaspoon teriyaki sauce -- or more to taste 1 tablespoon fresh rosemary OR 1 teaspoon dried rosemary salt and freshly ground pepper -- to taste rosemary and parsley sprigs -- for garnish 8 servings Another delicious mushroom appetizer that can also be used as a first course. Preheat the oven to 350 degrees. Cut the stems off the mushrooms. Arrange the caps, smooth side up, in a lightly oiled oblong baking dish. Arrange the sliced margarine over the mushrooms, then sprinkle with the remaining ingredients except garnish and season with a bit of salt and pepper. Bake, uncovered, for 40 minutes. Serve warm with cocktail breads or warm pita wedges on a platter garnished with rosemary and parsley sprigs.
