Guest guest Posted February 22, 2002 Report Share Posted February 22, 2002 * Exported from MasterCook Mac * Quick Pasta w Tomato Sauce, Goat Cheese & Green Beans Recipe By : Martha Rose Shulman, The Best Vegetarian Recipes p. 209 Serving Size : 4 Preparation Time :0:00 Categories : Pasta, Pizza, and Bruschetta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup tomato sauce homemade or commercial 3/4 pound dried pasta 1/2 pound green beans -- trimmed and cut in half 2 ounces fresh goat cheese -- about 1/2 cup such as Montrachet salt -- to taste freshly ground black pepper -- to taste When goat cheese is stirred into a tomato sauce, whether you've made the tomato sauce or bought it, the pasta dish takes on a rich, complex dimension. This makes a great last-minute dinner. MAKES 4 SERVINGS 1. Bring a large pot of water to a boil. Meanwhile, heat the tomato sauce in a saucepan or nonstick frying pan. 2. When the water reaches a boil, add 1 tablespoon salt and gradually add the pasta. Stir to make sure the pasta doesn't stick to the bottom of the pot. About 5 minutes before the pasta is done, add the green beans to the pot. Cook until the pasta is al dente, firm to the bite. Drain. 3. Toss the pasta and green beans in a warm pasta bowl with the tomato sauce and goat cheese. Add salt and pepper and serve. Advance Preparation: The tomato sauce can be made days ahead of serving if you’re not using a commercial sauce. The beans can be prepared hours ahead of cooking.
