Guest guest Posted February 21, 2002 Report Share Posted February 21, 2002 * Exported from MasterCook * Carrot Zucchini Crumb Casserole Recipe By :Dreena Burton Serving Size : 5 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup red onions -- finely chopped 1/2 cup celery -- finely chopped 1/2 tablespoon olive oil 3/4 cup soft tofu 1/3 cup Nayonnaise (or other creamy, not too tangy vegan mayonnaise) 2 large garlic cloves -- roughly chopped 1 teaspoon ground coriander 1 tablespoon mild Dijon mustard -- (1 to 1 1/2) 1/2 teaspoon sea salt 1/8 teaspoon fresh ground black pepper 3 carrots -- grated (food processor is easiest) 2 cups zucchini -- grated (food processor is easiest) Topping: 2 cups good quality breadcrumbs -- packed 1/4 cup sesame seeds 1 teaspoon mild Dijon mustard 1/2 tablespoon olive oil Preheat oven to 375F. In a saucepan, saute onion and celery in the 1/2 tbsp olive oil over medium heat for 5-6 minutes until just softened, and season with pinch of sea salt and black pepper. Remove from heat and set aside. in food processor, puree tofu and add Nayonnaise garlic, coriander, mustard, sea salt, and pepper, scraping down the sides of the food processor. in a large bowl, combine carrots and zucchini with tofu mixture, onions and celery, and mix well. Transfer to a lightly oiled 8 " x12 " baking dish. Combine ingredients for the topping and mix together with your hands. Sprinkle topping evenly over vegetable mixture and press it down lightly Bake for 28-30 minutes, until the casserole bubbles around the edges and the topping is golden brown. Serves 5.
