Guest guest Posted February 21, 2002 Report Share Posted February 21, 2002 * Exported from MasterCook * Baked Cottage Cheese Diamonds Recipe By : Vegetarian Celebrations by Nava Atlas, page 233 Serving Size : 6 Preparation Time :0:00 Categories : Appetizers And Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups low-fat small-curd cottage cheese 1/2 cup grated Swiss cheese 2 eggs -- beaten 1 small onion -- finely grated 1/3 cup fine dry bread crumbs 1 teaspoon mixed dried herbs -- of your choice salt and freshly pound pepper -- to taste 6 to 8 servings Preheat the oven to 350 degrees. Combine all the ingredients in a mixing bowl and stir together thoroughly. Pour into a lightly oiled 9- by 9-inch baking dish. Bake for 40 minutes, or until the top is golden brown. Let stand 10 to 15 minutes, then cut into small diamond shapes. Arrange on a platter and serve warm or at room temperature.
