Baked Garlic With Brie

2 whole bulbs garlic

8 ounces Brie -- at room temperature

cocktail bread or crispbread

OR narrow crusty French bread

sliced 1/2 inch thick

6 ounces jarred roasted red peppers -- well drained

cut into small narrow strips

 

8 to 10 servings

 

Garlic aficionados will love this, and those shy of the pungent taste of

raw garlic will be pleasantly surprised by the absence of its usual

bite. In its place is a mild, nutty flavor that leaves none of that

characteristic aftertaste.

 

Remove some of the papery outer layers from the garlic, but leave the bulbs

intact. Place on a baking sheet and bake in a 350-degree oven or

400-degree toaster oven for 40 to 45 minutes, or until the cloves are

soft. Test with a toothpick or a sharp skewer.

 

To serve, gently separate the cloves and arrange them on a serving

plate. Place the Brie on a larger plate, surrounded by the bread of your

choice. Place the red pepper strips in a small bowl and provide a small

fork. Each guest should spread a little Brie on a piece of bread with a

spreading knife, squeeze a garlic clove directly onto it, then top it with

a strip or 2 of red pepper You could prepare a few at first as examples.
