Thai Rice Noodle Broth

2 1/2 cups vegetable stock

3 3/4 cups water

2 ounces creamed coconut

2 teaspoons lemon juice

1/2 teaspoon grated lemon rind

2 pieces fresh ginger root (half-inch each) -- grated

1 garlic clove -- crushed

2 teaspoons tomato paste

2 teaspoons chinese five spice powder

2 kaffir lime leaves

2 ounces thin rice noodles

1 bunch spring (green) onions

4 ounces spinach

5 ounces tofu

8 ounces bean sprouts

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh cilantro

salt and freshly ground black pepper

 

1. Place the stock and water in a saucepan with the creamed coconut, lemon

juice, lemon rind, ginger, garlic, tomato paste, Chinese five spice powder,

kaffir lime leaves and rice noodles. Bring to the boil and simmer for 5 minutes.

 

2. Slice the spring (green) onions and spinach, and cube the tofu. Add these to

the pan along with the bean sprouts, basil and fresh cilantro. Bring to the boil

and simmer for 3-5 minutes until the spinach and spring (green) onions are just

cooked. Season, to taste with salt and black pepper, remove the kaffir lime

leaves and serve.

 

TIP: Creamed coconut is a pure product made from fresh coconut and formed into a

convenient block; available in Indian and Asian groceries or food sections of

the larger supermarkets.

NOTES : Do make the effort to obtain the ingredients for this oriental soup,

because it is so easy to make, yet the flavors when combined are truly

wonderful. Kaffir lime leaves are available dried if you cannot find any fresh.
