Guest guest Posted February 20, 2002 Report Share Posted February 20, 2002 I realize I'm lacking in computer skills, but this recipe shows up just fine in my MC, I'm trying again, if it doesn't show in the exported image, I'm stymied. .. . * Exported from MasterCook * " Grate " Potato Bake Recipe By :Dreena Burton Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds russet potatoes -- peeled and thickly grated 1 1/4 cups red onions -- (1 1/4 to 1 1/2) thinly sliced 1 teaspoon dry mustard 2 teaspoons dried dill 3/4 teaspoon sea salt fresh ground black pepper to taste 1 1/2 cups plain soy milk 1 cup breadcrumbs -- (1 to 1 1/4) 2 teaspoons olive oil -- (2 to 3) Sidebar: This dish is excellent with a sauce such as " Creamy Dijon Dill Dressing (p. 77), " Tahini-Tamari Sauce (p. 74), " Mi-So Good Gravy " (p. 72), or Avocado Roasted Garlic Sauce (p. 71). Serve along with a generous, crunchy salad and/or lightly sauteed or steamed veggies. Preheat oven to 400F. In a large bowl, combine all ingredients except soy milk, breadcrumbs and olive oil, and toss well. Transfer mixture to a lightly oiled 8 " x12 " baking dish. Pour soy milk over the top, and lightly press down mixture with the back of a large spoon or spatula. Combine breadcrumbs with olive oil, and sprinkle them over the top. Cover with tin foil and bake for 35-40 minutes then remove foil and continue to bake for 20-25 minutes, until potatoes are tender and topping is nicely browned For 5 servings, per serving: Calories: 288; Total Fat: 5 g (Sat.
