Guest guest Posted February 20, 2002 Report Share Posted February 20, 2002 * Exported from MasterCook * Chewy Nutty Cereal Chip Bars Recipe By :Dreena Burton Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup almond butter -- (see sidebar) 3 tablespoons honey option -- (brown rice syrup, barley malt, or agave nectar) 2 tablespoons oure maple syrup 1 tablespoon plain or vanilla soy milk couple pinches sea salt 1 teaspoon pure vanilla extract 3 tablespoons shredded coconut 2 cups rice crisp cereal 2 tablespoons non-dairy chocolate chips -- (see sidebar) Sidebar: Substitution idea: Instead of almond butter, try another natural nut butter, such as peanut or cashewe. And instead of chocolate chips, try adding raisins or toasted chopped nuts, such as almonds. In a saucepan over medium-low heat, combine almond butter, honey option, maple syrup, soy milk, and salt. Heat mixture slowly until just well melted, about 4-5 minutes (careful not to boil). Remove from heat and stir in vanilla, coconut, rice crisp cereal, and chocolate chips (add chips last because they will melt too quickly if added sooner). Spoon mixture into a lightly oiled 8 " x8 " baking pan, then press mixture down evenly. Refrigerate until cool, then cut into squares. Makes 12-16 squares.
