Guest guest
Hello, Leah I also used to get frustrated with trying to find time to prepare foods that were portable. I came up with a solution by making a big batch of raw food bars that I keep individually wrapped in the freezer. I just toss one in my purse, and it is thawed out by the time I need it. I don't have any exact measurements in the recipe, but you will get the idea: This works well also if you want to add in raisons, berries, etc. appx 2 cups of mixed raw nuts (almonds, cashews, hazelnuts, etc) appx 1 cup sunflower seeds appx 1/2 cup sesame seeds couple of bananas (I sometimes use organic baby food bananas, apples, or pears) a little raw agava nector if you like it sweeter, or some dates I chop the nuts finely in a food processor, then transfer them to a bowl. I leave the sunflower and sesame seeds whole because I like the " crunch " , but you can grind them as well, if you like. I put the chopped nuts in a large bowl and blend in the mashed banana or baby food (pear baby food makes a delicious one) You can also add in some chopped dates or apples for texture. Anyway, stir it all up (a fork works best) until it resembles a dough like consistancy. I turn the whole mess out onto a piece of wax paper and roll it up (like the slice and bake cookies you can buy) I refrigerate it just for a few minutes to set up, then slice it like the cookie dough. I put the " rounds " in my food dehydrator (bought mine at a flea market for $3 bucks!) and dehydrate for about 4 hours. These store well in the fridge, or can be frozen. I keep small ziplock bags with about 4 each in it in the freezer so I can just toss the bag in my purse when I go out. They defrost in about hour and will keep all day. I sometimes add in fresh berries or a little organic cocoa powder or carob. It is fun to experiment with different flavors. I hope you all enjoy it. Let me know how it works for you or if you need further info!! Brenda
