I cut up or slice things like sweet potatoes, squash, red peppers, radishes, zucchini etc. Then, I make up a marinade and soak them for awhile, unless I am in a hurry, then I just dredge them in the marinade, and dehydrate. For the marinade I use some oil, usually olive, lemon juice, and whatever spices appeal to me. If you can find a vegetarian worstershire sauce that adds a wonderful flavor. You can leave them in the marinade for an hour or overnight. How long you dehydrate depends on the veggies, how thick you cut them and how chewy or crisp you want them. I like to sprinkle some cheyenne pepper on them before I put them in the dyhydrator to add zip to them. I really, really like doing this with red peppers and am looking forward to late summer when you can buy them reasonable by the bushel at the farmer's market. Today I finished up some veggie crackers to which I added a quart of broccoli sprouts(made 8 trays). Carrots, celery, red peppers, soaked sesame seed, almonds, walnuts and sprouted sunflower seeds with some ground flax and soaked chia seeds to bind them. I chop everything fine in a food processor except for the sunflower seeds which I leave whole. Also, salt, cumin and cheyenne to taste. The veggies were 1 to 1.5 times the volume of the nuts and seeds. With all the veggies this will be a good food for traveling. According to the sprout people site you get the antioxidants of 3 pounds of broccoli in 1 ounce of broccoli sprouts. These crackers take a long time to dehydrate 24-30 hours. Also, be sure to score them for cutting while they are still soft, actually a little goopy, as they crumble easily. You will want to make them pretty thick, at least 1/4 inch.
