Many people get concerned about the glycemic index when they have food " allergies " or " sensitivities " . This is a good thing. One interesting thing that I have discovered is that, when wheat is sprouted, it does not trigger my normal " wheat response " (I am sensitive to wheat, and when I get things like bread, or cake, I will eat them ad infinitum, or else ad nauseam, which is why I adhere to low glycemic foods) I am also sugar sensitive, but I have avoided sugar for so long that I rarely mess with it, and I almost don't like the taste. I avoid grains, sprouted or otherwise. I eat lots of veggies, too, but my diet is mostly fruit.
