And the Excalibur is usually a very reliable piece of equipment. We bought my father in law one and he LOVES it. But, when it first arrived there was a defect which they promptly resolved. They BETTER. !!! <<<<<<<<<<When my Excalibur went, I just called Excalibur direct -- 916-381-4254. And I didn't buy my dehydrator directly from them. Didn't matter, they sent me a new thermostat and I put it in no problem. Sounds like you didn't have enough liquid to make your cashews creamy. I've found you can't always follow the recipes exactly in the raw food world. A little fresh water would have made things a little fluffier and smoother. I usually add dates and I soak them prior to use and save the soak water. Do not use the soak water from the cashews, however. Shari >>>>>>>>>> Oh.............more liquid. Duh...LOL. " Raw cashews in bulk or not vacuum packed aren't really raw. Really raw cashews are pretty expensive. If you get 10 pounds at a time from http://www.rawfood.com, they are $11 a pound plus shipping. Otherwise, they are $12.50 a pound. Those are fancy splits. The whole ones are out of stock and are $12.95 a pound when they have them. Whole Foods has them for the same price, but, of course, there is no shipping. I'll use the not really raw ones if I'm making something to take for " cooked foodists " to eat because it doesn't matter to them but I keep the really raw on hand for me. It matters to me.
