My Salad Dressing

I think I got this recipe from Fit For Life (anyone remember?), and I love

it. :)

It's very simple, and I haven't tired of it yet.

 

3 Tbs organic extra virgin (cold pressed) olive oil

1 Tbs lemon juice, freshly squeezed

1/4 tsp Celtic sea salt

 

Blend, and pour. :)

 

There's also a garlic variation in which you take one clove of garlic and

cut it in half, put it in the olive oil and lemon juice mixture and allow it

to marinate there for 15 minutes. Then pierce if with a fork and use that

to stir the mixture. Afterward, discard the garlic (I save mine for my

husband's stir fry nights). (I also usually don't add the salt until after

getting rid of the garlic so that the garlic doesn't take my salt!) :)
