So, like most other folks out there, I've been reading lot's of books. I have a few questions maybe someone would be willing to share their knowledge about. 1. Purely a functional question. I'm about to invest in a dehydrator. I live in a studio apartment. Will I hear it when it's on? I have a convection oven, and the fan is pretty noisy. 2. My background is pretty much low-fat vegan. I've noticed that a fairly high percentage of raw recipes contain a boatload of nut, seeds, and oil. I did some calorie counting on a random sample of recipes and found them to be roughly 70-90% fat! How can this be? What am I missing here? 3. Does anyone know of scientific studies outlining the process of just how the stomach treats incoming enzymes? Thanks, and good to be here!
