Guest guest Posted March 5, 2006 Report Share Posted March 5, 2006 Hi, I'm completly new to raw dieting. I'm starting off slowly with only raw foods during the week and some cooked on the weekends. When it comes it beans and lentils, can I use the run-of-the-mill store bought dried ones? I just need to soak them 12 hours and they're ready to eat, right? And are they then sproutable? Guest guest Posted March 6, 2006 Report Share Posted March 6, 2006 Hi Tiffany, Sometimes the run of the mill ones in the stores will work, sometimes they won't. It all depends on how they were processed and how old they are. The ones you find in the plastic bags were never ment to be sprouted, just cooked, so freshness isn't a big concern. The ones in the bulk bins at health food stores can work, but I've gotten erratic results from those at best. I wouldn't sprout kidney, black beans, and ones like that. Mung beans, chick peas, adzuki beans and lentils are all good. You can just soak them overnight and eat them, but play with sprouting them some. Some beans, like chick peas, taste better with a longer tail that just soaking can do. Hope that helps! Otherwise you might get chemical residues on your seed and also they will be lacking in minerals. Lentils need soaking for 8 - 12 hours and then sprouting for 3 - 4 days.
