Guest guest
I just made this simple but tasty salad for lunch and it was great. The contrasting and stunning red and green colors are perfect for the holidays! So just thought I would pass it along. I hope you all enjoy it! Raw Foodists perhaps you know a way to do this for raw living????????? Just wanting to share. Artichoke Salad 1 box of birds eye brand frozen artichoke hearts 1 pomgranate, peeled and seeded 2 tablespoons lemon juice 2-3 tablespoons extra virgin olive oil 2-3 tablespoons grated parmesan cheese Boil artichokes in salted water in a sauce pan on the stove top . Drain & put into a medium sized bowl and cool. Add the pomgranate seeds and the lemon juice , olive oil and cheese and toss well. Serve chilled. Enjoy. Makes about 4 servings. This recipe can be modified by adding or subtracting the ingredients for as many or as few people as you need to serve. Eg; 2 boxes of artichokes and 2 pomgranates and double the other ingredients to feed 8 people.
