Ume Plum Vinegar Marinate for 2 hours. Place on teflex sheets and dehydrate for 9 hours. I've started this and they will be ready for breakfast. or, more likely, a midmorning snack. :-) The Ume Plum Vinegar appears to be mostly salt. 1 tsp cayenne seems to be too much, so I reduced this to 3/8 tsp. The 1/8 tsp is the only one that fits in my cayenne container and 3 just seemed to be enough. :-) Certainly not optimal, but, might be nice for a " treat " . Mostly eating simple, whole foods, but, for some foods that I don't like to eat " plain " , such as eggplant and squash, having a recipie book is quite nice. The cayenne was what it said on a web forum, referenced to the book. But when I checked the actual book, well, 'twas ground black pepper. Mine's dehydrating-away too... Seems an odd item to break a cleanse with... it's high in fat... I didn't taste the vinegar. I noticed though, that it didn't smell like vinegar. I appreciate your insight on the salt. By the way, I love this book, by " The Top Raw Men. " The " Sun Dried " (okay, electrically dehydrated) Tomatoes are phenomonal. I've got two shelves of them, in addition to the eggplant.
